2012 Paul's Legacy Pinot Noir

The 2012 vintage was simply spectacular for Pinot Noir. A mild winter and unseasonably warm 80 degree March temperatures caused a record-early bud break. Warm weather continued through summer leading to the earliest harvest on record. The resulting Pinot Noir benefited from the heat, and has intense flavors and beautiful structure. This wine is a tribute to the late Paul Wellington, former vineyard manager at Hobbit Hollow Farm. In 1998, he planted the vineyard, and in subsequent years he nurtured the vines on the high elevation shores of Skaneateles Lake. Pinot Noir can only evolve into a beautiful wine with proper care and devotion in the vineyard and Paul was the perfect steward for this grape. While 2012 was Paul’s final vintage, we know that his gentle spirit and peerless commitment will continue to speak through the vines for vintages to come.
The grapes were hand picked into small, 30 pound baskets to prevent bruising. On the crush pad, we gently hand-sorted the grapes to ensure that only the best possible fruit was included in the wine. We fermented the whole clusters of grapes in one ton bins, and punched down the caps by hand twice per day. Fermentation lasted for 13 days, then we gently basket-pressed the grapes, and transferred the wine to French Oak barrels for 12 months of aging. The wine was not fined nor filtered. 147 cases produced.
Pairs beautifully with bruschetta topped with roasted shitake mushrooms and bur rata, roasted pork tenderloin and fennel, or thyme crusted rack of lamb.
