Limited production sparkling wine crafted in the traditional method from 100% Pinot Noir grapes. Strawberries on the nose followed by fresh cranberries and white cherries on the palate and a dry, brisk finish. Available only online or in our tasting room.
Aromas of strawberries, elderberries and jasmine on the nose, followed by a burst of fresh cranberries, white cherries and plums on the palate and a long, dry, refreshing finish.
The vintage started with a mild winter, a cool spring, a mid-May bud break and a June bloom. Early summer was hot and dry, while late summer was warm with abundant rainfall. In early September, dry weather returned, fully ripening the Pinot Noir grapes.
The grapes were hand picked, destemmed and optically sorted to select only the very best fruit. The berries rested for 7 hours at 48 degrees to extract color and flavor from the skins. The fruit was basket pressed and the juice was transferred to stainless steel tans for a 25 day fermentation. Afterward, the wine was bottled and fermented in the traditional method to create delicate, tiny bubbles in the finished wine. The wine was disgorged on December 18th, 2020 after 2 years of aging in the bottle on the lees.
