Enticing sparkling wine crafted in the traditional method (Méthode Chamepnoise). Tantalizing aromas of apricots, brioche and anise on the nose, followed by exotic spices, fresh cream and mangoes on the palate and a long, tantalizing, decadent finish.

We hand-picked, hand-sorted, and gently basket-pressed the Pinot Noir to obtain clear white juice from the red grapes and split the juice into 2 lots for primary fermentation: 45% in French oak, and 55% in stainless steel. We created this wine in the traditional method with secondary fermentation in the bottle to create delicate, tiny bubbles. We aged the wine en-tirage for 7 years, 1 month, and 30 days to provide beautiful richness and complexity. We only produced 43 cases.
In 2016, the wine was bottled, and yeast was added as part of the tirage to induce secondary fermentation. The wine rested en tirage for over 7 years to create fine bubbles and sculpt the volume. A final dosage at disgorgement was added to finish the wine in a brut, or dry style.
This wine pairs well at the front end of the meal and is substantial enough to stand up to main courses. Enjoy with fresh oysters on the half shell, melons wrapped in prosciutto, crostini topped with creme fraiche and smoked salmon, or as a standalone apertif.
