Crafted from grapes grown on 3 Finger Lakes vineyards. Beautiful notes of dark cherries on the nose, followed by rich plums on the palate, and a long finish with medium-firm tannins.
Hints of dark cherries on the nose, followed by plums, currants and more cherry notes on the palate and medium-firm tannins on the long finish.
The grapes were hand-picked, and optically sorted. The optical sorter used cameras to evaluate the color and texture of each berry, and selected only those which met our standards. Stems were hand sorted to select those we wished to include in the fermentation. The selected fruit and stems were 50% whole cluster fermented, then basket pressed and gently gravity-flow transferred into barrels for 11 months of aging.
