Delicate notes of rose petals, apricots, and cherries on the nose, followed by hints of orange zest and fresh strawberry-rhubarb pie on the palate, and a long, tantalizing, dry finish.
The grapes were hand picked, destemmed and optically sorted to select only the very best fruit. The berries rested for several hours to extract color and flavor from the skins. The fruit was basket pressed and the juice was transferred to stainless steel tanks for primary fermentation. Afterward, the wine was bottled and fermented in the traditional method to create delicate, tiny bubbles in the finished wine. The wine was disgorged on December 8th, 2021 after 2 years of aging in the bottle on the lees.
