Our limited-production cult-classic white wine made from red Pinot Noir grapes. Barrel fermented in French oak and sur-lie aged to enhance richness and mouthfeel. Apricots and honey on the nose, white peaches and ripe d'Anjou pears on the palate and a dry, refreshing finish....
Honey, beeswax, apricots and salinity on the nose, followed by white peaches, fresh cream, tangerines, and ripe d'Anjou pears on the palate. The finish is crisp, dry, and refreshing.
The grapes were hand picked into small, thirty pound baskets to prevent bruising. On the crush pad, we gently destemmed the grapes, then optically sorted the grape berries. The optical sorter used cameras to evaluate the color and texture of each berry, and selected only those which met our standards for the best possible fruit for Polarity. We immediately pressed the grapes after optical sorting to minimize skin contact, creating a pale colored juice. The juice was barrel fermented, then underwent a secondary malolactic fermentation. The wine was sur-lie aged for just over ten months, and stirred about every three days to enhance the mouthfeel and add richness.
Enjoy with seafood dishes such as shrimp, asparagus and avocado in a lemon-caper brown butter sauce or pan-seared halibut with sweet peas and grapefruit. This also works well with roasted or grilled white meats such as a whole roasted chicken or hazelnut crusted pork chops with celery root puree - the richness of the wine stands up to the food, while the crispness provides freshness and balance.
