Limited production sparkling wine crafted in the traditional method from 100% Pinot Noir grapes. Aromas of rose petals, raspberries, and apricots on the nose, followed by fresh strawberries on the palate. The finish is dry and tantalizing, drawing you back to the glass for more.

The grapes were hand picked, destemmed and optically sorted to select only the very best fruit. The berries rested for several hours to extract color and flavor from the skins. The fruit was basket pressed and the juice was transferred to stainless steel tanks for primary fermentation. Afterward, the wine was bottled and fermented in the traditional method to create delicate, tiny bubbles in the finished wine. The wine was disgorged on April 7, 2023 after 3 years of aging in the bottle on the lees.
Enjoy with goat cheese and arugula ravioli in brown butter, barbeque chicken served with quinoa, kale, tomato, and corn salsa salad, or a crustini topped with ripe herloom tomatoes, creamy buratta, and basil.
