Our limited-production cult-classic white wine made from red Pinot Noir grapes. Barrel fermented in French oak and sur-lie aged to enhance richness and mouthfeel. Apricots and citrus on the nose, white cherries and green apples on the palate and a dry, refreshing finish....
Notes of fresh apricots and citrus blossoms on the nose. The rich palate features hints of Meyer lemons, white cherries and green apples, and carries a bit more weight than a typical white wine. The long, mouthwatering finish is dry and refreshing.
The grapes were hand picked into small, thirty pound baskets to prevent bruising. On the crush pad, we gently destemmed the grapes, then optically sorted the grape berries. The optical sorter used cameras to evaluate the color and texture of each berry, and selected only those which met our standards for the best possible fruit for Polarity. We immediately pressed the grapes after optical sorting to minimize skin contact, creating a pale colored juice. The juice was barrel fermented, then underwent a secondary malolactic fermentation. The wine was sur-lie aged for just over ten months, and stirred about every three days to enhance the mouthfeel and add richness.
Enjoy with seafood dishes such as shrimp, asparagus and avocado in a lemon-caper brown butter sauce or pan-seared halibut with sweet peas and grapefruit. This also works well with roasted or grilled white meats such as a whole roasted chicken or hazelnut crusted pork chops with celery root puree - the richness of the wine stands up to the food, while the crispness provides freshness and balance.
