Estate
The Heart & Hands Estate vineyard is situated on the Onondaga Limestone Escarpment. Vinifera grapes flourish in the presence of limestone-based soils, which provide the vines with a solid foundation for growth. The vineyard is sustainably farmed without the use of any herbicides or insecticides. The vineyard is planted to seven Dijon clones of Pinot Noir, which are evenly distributed across the upper, middle and lower vineyard blocks.
The grapes were handpicked and then optically sorted - each berry was scanned by cameras to ensure that the fruit met our standards for exceptional quality. We included 90% of the stems in the fermentation. The grapes were gently basket pressed and transferred into neutral French oak barrels for 16 months of aging.
Pairs beatifully with Sesame coated pan-seared salmon over soba noodles or with bok choy, Wild mushroom and buratta bruschetta, chicken with morels & tarragon cream sauce or fennel garlic pork roast.
The name of our Estate Reserve wine, Mo Chuisle, is a Gaelic phrase, and translates literally to “My Pulse” or colloquially to “My Darling”. It is our great pleasure to share this wine: a long-tended dream, finally brought to life.
